Omelette filled with cheese, potatoes and smoked meat or ham

Omelette garnie de fromage, pommes de terre et viande fumée ou jambon

Ingredients

  • 1 onion, thinly sliced
  • 75 ml (5 tbsp) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 15 ml (1 tbsp) maple syrup
  • 2 potatoes, thinly sliced
  • 8 eggs
  • 125 ml (1/2 cup) milk
  • 1 clove garlic, minced
  • 15 ml (1 tbsp) baking powder
  • 125 ml (1/2 cup) bacon, cooked crispy and chopped
  • 250 ml (1 cup) cheddar cheese, grated
  • 125 ml (1/2 cup) parsley leaves, chopped
  • salt and pepper to taste

Preparation

  1. In a hot skillet, brown the onion in the fat of your choice. Add salt, pepper, maple syrup and cook for 2 minutes. Remove and set aside in a bowl.
  2. In the same hot pan, cook the potatoes over low heat for 5 minutes. Season with salt and pepper.
  3. Add the potatoes to the reserved onions.
  4. In another bowl, using a whisk, beat the eggs, milk, garlic, baking powder, salt and pepper.
  5. In the hot pan, pour the egg mixture, then add the onions and potatoes. Spread with bacon, then the cheddar. Cover and cook over low heat.
  6. Before serving, sprinkle the parsley on top.
