Ingredients
- 1 onion, thinly sliced
- 75 ml (5 tbsp) fat of your choice (butter, oil or Mycryo cocoa butter)
- 15 ml (1 tbsp) maple syrup
- 2 potatoes, thinly sliced
- 8 eggs
- 125 ml (1/2 cup) milk
- 1 clove garlic, minced
- 15 ml (1 tbsp) baking powder
- 125 ml (1/2 cup) bacon, cooked crispy and chopped
- 250 ml (1 cup) cheddar cheese, grated
- 125 ml (1/2 cup) parsley leaves, chopped
- salt and pepper to taste
Preparation
- In a hot skillet, brown the onion in the fat of your choice. Add salt, pepper, maple syrup and cook for 2 minutes. Remove and set aside in a bowl.
- In the same hot pan, cook the potatoes over low heat for 5 minutes. Season with salt and pepper.
- Add the potatoes to the reserved onions.
- In another bowl, using a whisk, beat the eggs, milk, garlic, baking powder, salt and pepper.
- In the hot pan, pour the egg mixture, then add the onions and potatoes. Spread with bacon, then the cheddar. Cover and cook over low heat.
- Before serving, sprinkle the parsley on top.
