Ingredients
- 80 ml (1/3 cup) chia seeds
- 1 L (4 cups) almond or soy milk
- 15 ml (1 tbsp) vanilla extract
- 4 drops bitter almond extract.
- 1 pinch of salt
- 60 ml (4 tbsp) maple syrup
- 8 slices multi-grain bread
- 60 ml (4 tbsp) vegetable oil
- 500 ml (2 cups) berries (strawberries, blueberries, blackberries, raspberries)
- 120 ml (8 tbsp) vegan vanilla Greek yogurt
- 60 ml (4 tbsp) slivered almonds
Preparation
- In a bowl of cold water, soak the chia for 30 minutes. Then drain.
- In a bowl, using a hand blender, mix the chia, almond milk, vanilla extract, bitter almond extract, pinch of salt and maple syrup.
- In a large bowl, pour the mixture and dip the slices of bread, to soak them in the mixture.
- In a hot pan, brown the slices of bread, in a little oil, 2 minutes on each side
- In each plate, place two slices, add the berries and yogurt, sprinkle with flaked almonds and drizzle with a little maple syrup.
