Vegan French Toast with Berries and Maple Syrup

Ingredients

  • 80 ml (1/3 cup) chia seeds
  • 1 L (4 cups) almond or soy milk
  • 15 ml (1 tbsp) vanilla extract
  • 4 drops bitter almond extract.
  • 1 pinch of salt
  • 60 ml (4 tbsp) maple syrup
  • 8 slices multi-grain bread
  • 60 ml (4 tbsp) vegetable oil
  • 500 ml (2 cups) berries (strawberries, blueberries, blackberries, raspberries)
  • 120 ml (8 tbsp) vegan vanilla Greek yogurt
  • 60 ml (4 tbsp) slivered almonds

Preparation

  1. In a bowl of cold water, soak the chia for 30 minutes. Then drain.
  2. In a bowl, using a hand blender, mix the chia, almond milk, vanilla extract, bitter almond extract, pinch of salt and maple syrup.
  3. In a large bowl, pour the mixture and dip the slices of bread, to soak them in the mixture.
  4. In a hot pan, brown the slices of bread, in a little oil, 2 minutes on each side
  5. In each plate, place two slices, add the berries and yogurt, sprinkle with flaked almonds and drizzle with a little maple syrup.
