Ingredients
- 30 ml (2 tablespoons) maple syrup
- 90 ml (6 tablespoons) white balsamic vinegar
- 120 ml (8 tbsp) olive oil
- 15 ml (1 tbsp) garlic flower
- 2 bunches Quebec asparagus, cleaned, stems removed
- 1 onion, thinly sliced
- 125 ml (1/2 cup) Parmesan cheese, finely grated
- Salt and pepper to taste
Preparation
- Preheat barbecue to maximum.
- In a bowl, combine maple syrup, vinegar, oil, garlic flower, salt and pepper. Check seasoning.
- Place 4 sheets of aluminum foil on counter.
- Place asparagus, onion and prepared vinaigrette in the center of each sheet of foil and seal.
- Place the papillotes on the barbecue grill, cooking indirectly (with the fire turned off under the papillotes, and the side burner lit), close the lid and cook for 8 to 10 minutes.
- Just before serving, sprinkle the grated Parmesan over the asparagus.
