Papillote of asparagus and onion with white balsamic, Québec garlic or garlic flower

Cooking time : 8 to 10 minutes

Ingredients

  • 30 ml (2 tablespoons) maple syrup
  • 90 ml (6 tablespoons) white balsamic vinegar
  • 120 ml (8 tbsp) olive oil
  • 15 ml (1 tbsp) garlic flower
  • 2 bunches Quebec asparagus, cleaned, stems removed
  • 1 onion, thinly sliced
  • 125 ml (1/2 cup) Parmesan cheese, finely grated
  • Salt and pepper to taste

Preparation

  • Preheat barbecue to maximum.
  • In a bowl, combine maple syrup, vinegar, oil, garlic flower, salt and pepper. Check seasoning.
  • Place 4 sheets of aluminum foil on counter.
  • Place asparagus, onion and prepared vinaigrette in the center of each sheet of foil and seal.
  • Place the papillotes on the barbecue grill, cooking indirectly (with the fire turned off under the papillotes, and the side burner lit), close the lid and cook for 8 to 10 minutes.
  • Just before serving, sprinkle the grated Parmesan over the asparagus.
