Fish parmentier

Ingredients

  • 1 broccoli, tops
  • 1 cauliflower, chopped
  • 1 onion, thinly sliced
  • 60 ml (4 tbsp.) white wine or rice vinegar
  • 5 ml (1 tsp.) Sriracha sauce
  • 90 ml (6 tbsp.) maple syrup
  • 2 garlic cloves, minced
  • 4 portions cod
  • 60 ml (4 tbsp) panko breadcrumbs
  • 1 l (4 cups) mashed potatoes
  • 60 ml (4 tbsp.) grated Parmesan cheese
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. On a baking sheet lined with parchment paper or a silicone mat, arrange the cauliflower, broccoli and onion.
  3. In a bowl, mix vinegar, Sriracha sauce, maple syrup and garlic.
  4. Pour the mixture over the vegetables, season with salt and pepper, and bake for 20 minutes.
  5. Place the fish portions in a gratin dish, season with salt and pepper and sprinkle with the panko breadcrumbs.
  6. On top, add the roasted vegetables, cover with mashed potatoes, sprinkle with Parmesan and bake for 30 minutes.
