Ingredients
- 1 broccoli, tops
- 1 cauliflower, chopped
- 1 onion, thinly sliced
- 60 ml (4 tbsp.) white wine or rice vinegar
- 5 ml (1 tsp.) Sriracha sauce
- 90 ml (6 tbsp.) maple syrup
- 2 garlic cloves, minced
- 4 portions cod
- 60 ml (4 tbsp) panko breadcrumbs
- 1 l (4 cups) mashed potatoes
- 60 ml (4 tbsp.) grated Parmesan cheese
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- On a baking sheet lined with parchment paper or a silicone mat, arrange the cauliflower, broccoli and onion.
- In a bowl, mix vinegar, Sriracha sauce, maple syrup and garlic.
- Pour the mixture over the vegetables, season with salt and pepper, and bake for 20 minutes.
- Place the fish portions in a gratin dish, season with salt and pepper and sprinkle with the panko breadcrumbs.
- On top, add the roasted vegetables, cover with mashed potatoes, sprinkle with Parmesan and bake for 30 minutes.
