Pasta with arugula pesto and cherry tomatoes

P TES WITH ARUGULA PESTO AND CHERRY TOMATOES

Portions : 4 - Preparation : 5 minutes - Cooking : 10 minutes

Ingredients

  • 500 ml (2 cups) arugula
  • 125 ml (½ cup) pecans
  • 1 garlic clove
  • 125 ml (½ cup) olive oil
  • 125 ml (½ cup) grated Parmesan cheese
  • 500 g (1 lb) fusilli pasta
  • 500 ml (2 cups) cherry tomatoes
  • salt and pepper to taste

Preparation

  1. Using a food processor or hand blender, purée the arugula, walnuts, garlic, olive oil, Parmesan, salt and pepper to taste. The mixture should be thick and smooth. Set aside.
  2. In a pot of boiling water, cook pasta according to package directions.
  3. In a serving bowl, combine the cooked pasta, prepared arugula pesto and tomatoes.
