P TES WITH ARUGULA PESTO AND CHERRY TOMATOES
Portions : 4 - Preparation : 5 minutes - Cooking : 10 minutes
Ingredients
- 500 ml (2 cups) arugula
- 125 ml (½ cup) pecans
- 1 garlic clove
- 125 ml (½ cup) olive oil
- 125 ml (½ cup) grated Parmesan cheese
- 500 g (1 lb) fusilli pasta
- 500 ml (2 cups) cherry tomatoes
- salt and pepper to taste
Preparation
- Using a food processor or hand blender, purée the arugula, walnuts, garlic, olive oil, Parmesan, salt and pepper to taste. The mixture should be thick and smooth. Set aside.
- In a pot of boiling water, cook pasta according to package directions.
- In a serving bowl, combine the cooked pasta, prepared arugula pesto and tomatoes.
