Pasta with sautéed rapini

P TES WITH SAUTÉED RAPINI

Portions : 4 - Preparation : 15 minutes - Cooking time : about 15 minutes

Ingredients

  • 2 rapini feet
  • 4 portions of penne
  • 125 ml (½ cup) walnuts, chopped
  • 60 ml (4 tablespoons) olive oil
  • 1 lemon, juice
  • 2 garlic cloves, chopped
  • 60 to 90 ml (4 to 6 tbsp.) grated Parmesan cheese
  • ½ bunch chives, snipped
  • salt and pepper to taste

Preparation

  1. In a pot of boiling, salted water, cook the rapini for 4 minutes. Drain.
  2. In the same boiling water, cook the pasta according to the manufacturer's instructions.
  3. Meanwhile, coarsely chop the rapini.
  4. In a hot frying pan, fry the walnuts in olive oil for 1 minute. Add the rapini, lemon juice and garlic and cook for a further 3 minutes.
  5. Add the pasta. Check the seasoning.
  6. Sprinkle with cheese and chives.
