Ingredients
- 4 portions spaghetti
- 250 ml (1 cup) pancetta or guanciale, thinly sliced
- 125 ml (1/2 cup) grated Parmesan or Pecorino cheese
- 5 eggs, yolks removed
- Salt and pepper to taste
Preparation
- Cook the pasta al dente in a pot of boiling, salted water.
- Meanwhile, in a hot frying pan, brown the pancetta for 2-3 minutes.
- In a bowl, whisk together the yolks, 1/3 of the Parmesan and a touch of pepper, then add a little pasta cooking water to the sauce, whisking all the time.
- Add the pasta to the pancetta in the pan and sauté for 1 minute.
- Off the heat, add the egg and cheese mixture to the pasta, mix well, add a touch of pepper if necessary and serve immediately.
