CREAMY TOFU BACON PIES

Ingredients
Tofu bacon
- 45 ml (3 tablespoons) soy sauce
- 1 garlic clove, puréed
- 5 ml (1 tsp.) onion powder
- 45 ml (3 tbsp.) maple syrup
- 30 ml (2 tbsp) vegetable oil of choice
- 15 ml (1 tbsp) ketchup
- 5 ml (1 tsp.) smoked liquid
- 1 block firm or extra-firm tofu
- 4 portions pasta of your choice
- 1 onion, thinly sliced
- 60 ml (4 tbsp.) capers
- 60 ml (4 tbsp.) basil leaves, chopped
- 2 garlic cloves, chopped
- 125 ml (1/2 cup) white wine
- 125 ml (1/2 cup) 35% cream
- 125 ml (1/2 cup) grated Parmesan cheese
- Salt and pepper to taste
Preparation
- In a bowl, combine soy sauce, garlic, onion powder, maple syrup, oil, ketchup, smoked liquid, salt and pepper.
- On the work surface, cut the tofu into thin slices and marinate in the mixture.
- Preheat oven, rack in center, to 200°C (400°F).
- Place the tofu slices on a baking sheet lined with a silicone mat and bake for 15 to 20 minutes, until crisp. If possible, brush the slices halfway through baking. Set aside.
- Meanwhile, cook the pasta al dente in plenty of boiling, salted water.
- In a hot frying pan, sauté the onion for 2 minutes.
- Add the capers, basil and garlic.
- Deglaze with white wine, then add the cream and reduce slightly. Season with salt and pepper.
- Add the cooked pasta and mix well.
- Chop and add the tofu slices to the pasta.
- Cover with grated Parmesan cheese before serving.
