Decadent lobster pasta

DECADENT LOBSTER PIES

Portions : 4 - Preparation : 15 minutes - Cooking time : about 7 minutes

Ingredients

  • 1 to 2 lobsters 1/2 lb to 3/4 lb, boiled or steamed
  • 1/2 stick garlic butter
  • 125 ml (1/2 cup) 35% cooking cream
  • 125 ml (1/2 cup) red peppers, roasted and finely chopped (jarred or BBQ)
  • 1 lemon, zest and juice
  • 4 portions long pasta, cooked al dente
  • 8 basil leaves, finely chopped
  • 125 ml (1/2 cup) Parmesan cheese, grated
  • Salt and pepper to taste

Preparation

  1. Shell lobsters to remove as much meat as possible.
  2. Cut into bite-sized pieces.
  3. In a hot pan, melt the garlic butter, add the cream and peppers and bring to a simmer.
  4. Add lemon zest and juice, lobster and, over medium heat, let cream simmer to warm lobster, about 4 minutes. Check seasoning.
  5. Add pasta and continue cooking for 1 minute.
  6. Add basil and Parmesan cheese before serving.
