Pan-fried salmon steak with broccoli tops

Pavé de saumon poêlé aux sommités de brocoli

Serves : 4

Cooking Time: 20 minutes

Ingredients

  • 1 red onion, thinly sliced
  • 1 broccoli, chopped
  • 60 ml (4 tablespoons) olive oil
  • 2 garlic cloves, minced
  • 4 salmon steaks
  • 125 ml (1/2 cup) white wine
  • 60 ml (4 tbsp.) honey
  • 15 ml (1 tbsp.) Knorr concentrated vegetable broth
  • 60 ml (4 tbsp.) dill
  • 125 ml (1/2 cup) 35% cream
  • Salt and pepper to taste

Topping

  • 4 portions rice or fresh pasta

Preparation

  1. In a hot skillet, sauté onion and broccoli in some olive oil for 5 minutes.
  2. Add garlic, salt and pepper and mix. Remove and set aside in a bowl.
  3. In the same pan, in the remaining oil, sear the salmon for 2 minutes on each side.
  4. Then deglaze with white wine, add honey, Knorr broth, dill, broccoli mixture and cream and simmer for a further 5 minutes. Check seasoning.
