Grilled scallop and bacon, bell pepper and mango salsa

Cooking time : less than 5 minutes

Ingredients

  • 8 u10 scallops
  • 8 slices bacon
  • 90 ml (6 tablespoons) olive oil
  • 1 mango, cubed
  • 1 red bell pepper, cubed
  • 1 lime, zest
  • 60 ml (4 tbsp.) white balsamic vinegar
  • 125 ml (1/2 cup) white leek, julienned
  • Salt and pepper to taste

Preparation

  1. Pat scallops dry on a towel.
  2. Wrap a slice of bacon around each scallop and secure with a skewer.
  3. In a hot frying pan, sear the scallops in some of the olive oil for 45 seconds on each side, then continue cooking the scallops until the bacon is lightly colored. Set aside.
  4. In a bowl, combine mango, red bell pepper, lime zest, balsamic vinegar, leek, remaining olive oil, salt and pepper. Check seasoning.
  5. Serve the scallops with the salsa all around.
