Roasted turkey drumstick

Ingredients

125 ml (1/2 cup) tomato paste

60 ml (4 tbsp) honey

250 ml (1 cup) dry white wine

3 cloves garlic, minced

6 sprigs thyme, leaves removed

4 Quebec turkey drumsticks

1 l (4 cups) chicken broth

500 ml (2 cups) carrots, sliced

500 ml (2 cups) celery, sliced

125 ml (½ cup) parmesan, grated

Salt and pepper to taste

Preparation

Preheat the oven, rack in the middle, to 180 °C (350 °F).

In a bowl, mix the tomato paste, honey, white wine, garlic and thyme.

In a roasting pan, place the turkey drumsticks, pour the prepared mixture over them, add the broth, cover with aluminum foil and cook in the oven, covered, for 2 hours.

Remove the aluminum foil, add the carrots and celery and continue cooking for 2 hours.

Serve, sprinkled with parmesan and accompanied by fresh pasta.
