Ingredients
- 120 g (4 oz) dry goat or Manchego cheese
- 30 ml (2 tbsp.) fresh mint, chopped
- 100 ml (2/5 cup) fig jam
- salt and pepper to taste
- 12 jalapenos, cut in 2, seeds and white membranes removed
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- Mix cheese, jam and mint in a bowl. Add salt and pepper to taste.
- Fill each pepper lightly with the mixture and bake for 5 to 10 minutes.
