Peppers stuffed with cheese and mint

Ingredients

  • 120 g (4 oz) dry goat or Manchego cheese
  • 30 ml (2 tbsp.) fresh mint, chopped
  • 100 ml (2/5 cup) fig jam
  • salt and pepper to taste
  • 12 jalapenos, cut in 2, seeds and white membranes removed

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. Mix cheese, jam and mint in a bowl. Add salt and pepper to taste.
  3. Fill each pepper lightly with the mixture and bake for 5 to 10 minutes.
