Ingredients
- 1 ball of pizza dough
- 250 ml (1 cup) mozzarella, grated
- 250 ml (1 cup) cheddar, grated
- ½ roll of Paillot de chèvre, sliced
- 125 ml (1/2 cup) blue cheese, slivered
- 4 figs, quartered
- 500 ml (2 cups) arugula
- 60 ml (4 tbsp) olive oil
- 30 ml (2 tbsp) red wine vinegar
- 60 ml (4 tbsp) maple sugar
- Salt and pepper to taste
Preparation
- Preheat the oven, with the rack in the middle and a pizza stone if possible, to maximum.
- Divide the ball of dough in two and roll them out quite thin.
- On each pizza dough, spread the mozzarella, cheddar, goat cheese slices, blue cheese slivers, figs and bake in the oven for 5 to 10 minutes (depending on whether you are using a pizza stone or not).
- In a bowl, mix the arugula, olive oil, vinegar, salt and pepper. Check the seasoning.
- On each pizza, sprinkle the maple sugar, spread the seasoned arugula and serve hot.
