Cheese and maple sugar pizza

Ingredients

  • 1 ball of pizza dough
  • 250 ml (1 cup) mozzarella, grated
  • 250 ml (1 cup) cheddar, grated
  • ½ roll of Paillot de chèvre, sliced
  • 125 ml (1/2 cup) blue cheese, slivered
  • 4 figs, quartered
  • 500 ml (2 cups) arugula
  • 60 ml (4 tbsp) olive oil
  • 30 ml (2 tbsp) red wine vinegar
  • 60 ml (4 tbsp) maple sugar
  • Salt and pepper to taste

Preparation

  1. Preheat the oven, with the rack in the middle and a pizza stone if possible, to maximum.
  2. Divide the ball of dough in two and roll them out quite thin.
  3. On each pizza dough, spread the mozzarella, cheddar, goat cheese slices, blue cheese slivers, figs and bake in the oven for 5 to 10 minutes (depending on whether you are using a pizza stone or not).
  4. In a bowl, mix the arugula, olive oil, vinegar, salt and pepper. Check the seasoning.
  5. On each pizza, sprinkle the maple sugar, spread the seasoned arugula and serve hot.
