Pizza with grilled vegetables (perhaps a meat dish as well)

PIZZA WITH GRILLED VEGETABLES (CAN ALSO INCLUDE MEAT)

Portions : 4 - Preparation : 15 minutes - Cooking time : 8 to 10 minutes

Ingredients

  • 90 ml (6 tablespoons) olive oil
  • 2 garlic cloves, chopped
  • 2 pinches herbes de Provence blend
  • 1 eggplant, thinly sliced
  • 1 red bell pepper, cubed
  • 1 yellow bell pepper, cubed
  • 1 zucchini, thinly sliced
  • 1 onion, thinly sliced
  • 2 tomatoes, sliced
  • 1 ball pizza dough
  • 125 ml (½ cup) tomato sauce
  • 2 balls mozzarella, sliced
  • 4 slices bacon, cooked crisp and cut into pieces
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 290°C (550°F).
  2. In a ridged skillet, sear vegetables.
  3. In a bowl, combine oil, garlic, herbes de Provence, salt and pepper.
  4. Spread dough on work surface.
  5. Spread the tomato sauce over the dough, arrange the cooked vegetables, mozzarella slices and bacon bits and bake for 5 minutes.
  6. On top, spread the prepared flavored oil.
