White pizza with onions, olives, tomatoes and feta cheese

WHITE PIZZA WITH ONIONS, OLIVES, TOMATOES AND FETA CHEESE

Portions : 4 - Preparation : 15 minutes - Cooking : 15 minutes

Ingredients

  • 2 yellow onions, thinly sliced
  • 120 ml (8 tablespoons) olive oil
  • 125 ml (½ cup) white wine
  • 2 garlic cloves, minced
  • 2 pinches herbes de Provence blend
  • 15 ml (1 tablespoon) maple syrup
  • 250 ml (1 cup) feta cheese, cubed
  • 2 tomatoes, diced
  • 60 ml (4 tbsp.) parsley leaves, chopped
  • 125 ml (½ cup) green olives
  • 250 ml (1 cup) mozzarella, grated

Preparation

  1. Preheat oven, rack in center, to 290°C (550°F) (pizza stone in oven).
  2. In a hot skillet, brown onion in some olive oil, 3 minutes.
  3. Over low heat, add white wine, garlic, herbes de Provence, maple syrup and simmer. Check seasoning.
  4. In a bowl, combine feta, tomatoes, remaining olive oil, parsley, olives, salt and pepper. Check seasoning.
  5. Roll out the dough on the work surface.
  6. On top of the dough, place the stewed onions, mozzarella, tomato and feta mixture and bake for 5 minutes.
