WHITE PIZZA WITH ONIONS, OLIVES, TOMATOES AND FETA CHEESE

Ingredients
- 2 yellow onions, thinly sliced
- 120 ml (8 tablespoons) olive oil
- 125 ml (½ cup) white wine
- 2 garlic cloves, minced
- 2 pinches herbes de Provence blend
- 15 ml (1 tablespoon) maple syrup
- 250 ml (1 cup) feta cheese, cubed
- 2 tomatoes, diced
- 60 ml (4 tbsp.) parsley leaves, chopped
- 125 ml (½ cup) green olives
- 250 ml (1 cup) mozzarella, grated
Preparation
- Preheat oven, rack in center, to 290°C (550°F) (pizza stone in oven).
- In a hot skillet, brown onion in some olive oil, 3 minutes.
- Over low heat, add white wine, garlic, herbes de Provence, maple syrup and simmer. Check seasoning.
- In a bowl, combine feta, tomatoes, remaining olive oil, parsley, olives, salt and pepper. Check seasoning.
- Roll out the dough on the work surface.
- On top of the dough, place the stewed onions, mozzarella, tomato and feta mixture and bake for 5 minutes.
