Pepperoni pizza with vegetable sauce

Ingredients

  • 250 ml (1 cup) tomato sauce (homemade if possible)
  • 1 zucchini, brunoise
  • 1 carrot, brunoise
  • 250 ml (1 cup) mushrooms, sliced
  • 500 ml (2 cups) spinach leaves
  • 1 scoop homemade or store-bought pizza dough
  • 500 ml (2 cups) cheddar cheese, grated
  • 1 green bell pepper, sliced
  • 8 to 12 slices pepperoni

Preparation

  1. Heat tomato sauce in a saucepan, add zucchini, carrot, mushrooms, spinach, 250 ml (1 cup) water and simmer for 30 minutes.
  2. Preheat oven, rack in center, to 290°C (550°F) or maximum, if possible with pizza stone on rack.
  3. Using a hand blender, purée the mixture.
  4. On the work surface, roll out the pizza dough, spread the prepared sauce, cheese, bell pepper and piperoni, slide the pizza into the oven and bake for 5 to 8 minutes.
