Cajun shrimp po'boy at the bbq

CAJUN SHRIMP PO'BOY AU BBQ

Portions : 4 - Preparation : 10 minutes - Marinade : 10 minutes - Cooking time : 6 minutes

Ingredients

  • 16 to 24 shrimp 31/40 (or larger), shelled
  • 1 lime, juice removed
  • 1 lemon, juice
  • 120 ml (8 tbsp.) olive oil
  • 45 ml (3 tbsp.) honey
  • 45 ml (3 tbsp.) Cajun spice blend
  • 1 vegetable stock cube

Salad

  • 2 tomatoes, julienned
  • 1 red onion, thinly sliced
  • 1 garlic clove, minced
  • 60 ml (4 tbsp.) mayonnaise
  • 15 ml (1 tbsp.) hot sauce
  • 8 brioche sandwich or hot dog buns
  • 30 ml (2 tbsp.) melted butter

Smoke box: (optional)

  • Dry wood shavings

Preparation

  1. Preheat barbecue to high.
  2. In a bowl, combine lemon juice, lime juice, olive oil, honey, Cajun spices and bouillon cube.
  3. Add shrimp and marinate for 10 minutes.
  4. On the side of the barbecue grill, place the smoke box s and let the shavings catch fire and smoke (this technique gives a light smoky taste and doesn't deep-smoke the food).
  5. Place the shrimp on the grill, close the lid and grill for 3 minutes on each side.
  6. In a bowl, combine tomatoes, onion, garlic, mayonnaise and hot sauce. Check seasoning.
  7. Brush each loaf with melted butter and toast for a few seconds.
  8. Place shrimp and tomato salad on top of each loaf.
