CAJUN SHRIMP PO'BOY AU BBQ
Portions : 4 - Preparation : 10 minutes - Marinade : 10 minutes - Cooking time : 6 minutes
Ingredients
- 16 to 24 shrimp 31/40 (or larger), shelled
- 1 lime, juice removed
- 1 lemon, juice
- 120 ml (8 tbsp.) olive oil
- 45 ml (3 tbsp.) honey
- 45 ml (3 tbsp.) Cajun spice blend
- 1 vegetable stock cube
Salad
- 2 tomatoes, julienned
- 1 red onion, thinly sliced
- 1 garlic clove, minced
- 60 ml (4 tbsp.) mayonnaise
- 15 ml (1 tbsp.) hot sauce
- 8 brioche sandwich or hot dog buns
- 30 ml (2 tbsp.) melted butter
Smoke box: (optional)
- Dry wood shavings
Preparation
- Preheat barbecue to high.
- In a bowl, combine lemon juice, lime juice, olive oil, honey, Cajun spices and bouillon cube.
- Add shrimp and marinate for 10 minutes.
- On the side of the barbecue grill, place the smoke box s and let the shavings catch fire and smoke (this technique gives a light smoky taste and doesn't deep-smoke the food).
- Place the shrimp on the grill, close the lid and grill for 3 minutes on each side.
- In a bowl, combine tomatoes, onion, garlic, mayonnaise and hot sauce. Check seasoning.
- Brush each loaf with melted butter and toast for a few seconds.
- Place shrimp and tomato salad on top of each loaf.
