Jamaican-style pan-fried chicken

Serves : 4

Preparation time: 5 minutes

Marinade : 15 minutes

Cooking time: 5 to 6 minutes

Ingredients

  • 3 Québec chicken breasts, cubed
  • 45 ml (3 tbsp.) soy sauce
  • 4 jalapenos, diced (membranes and seeds removed)
  • 30 ml (2 tbsp.) ginger, grated
  • 60 ml (4 tbsp.) white wine vinegar
  • 15 ml (1 tbsp.) allspice, ground
  • 5 ml (1 tsp.) cinnamon, ground
  • 2 garlic cloves, minced
  • 5 ml (1 tsp.) herbes de Provence blend
  • 30 ml (2 tbsp.) honey
  • 6 green onion stalks, cut into segments
  • 60 ml (4 tbsp.) olive oil
  • 2 mangoes, julienned
  • 4 portions cooked rice
  • salt and pepper to taste

Preparation

  1. In a bowl, combine the chicken cubes, soy sauce, Jalapenos, ginger, vinegar, allspice, cinnamon, garlic, herbes de Provence and honey and marinate for 15 minutes.
  2. In a hot frying pan, with a little oil, brown the chicken and green onions in the oil for 5 to 6 minutes over high heat.
  3. The marinade will caramelize around the chicken, so add a little water if necessary if it's too dry.
  4. Serve with mango and rice.
