Ingredients
- 3 Québec chicken breasts, cubed
- 45 ml (3 tbsp.) soy sauce
- 4 jalapenos, diced (membranes and seeds removed)
- 30 ml (2 tbsp.) ginger, grated
- 60 ml (4 tbsp.) white wine vinegar
- 15 ml (1 tbsp.) allspice, ground
- 5 ml (1 tsp.) cinnamon, ground
- 2 garlic cloves, minced
- 5 ml (1 tsp.) herbes de Provence blend
- 30 ml (2 tbsp.) honey
- 6 green onion stalks, cut into segments
- 60 ml (4 tbsp.) olive oil
- 2 mangoes, julienned
- 4 portions cooked rice
- salt and pepper to taste
Preparation
- In a bowl, combine the chicken cubes, soy sauce, Jalapenos, ginger, vinegar, allspice, cinnamon, garlic, herbes de Provence and honey and marinate for 15 minutes.
- In a hot frying pan, with a little oil, brown the chicken and green onions in the oil for 5 to 6 minutes over high heat.
- The marinade will caramelize around the chicken, so add a little water if necessary if it's too dry.
- Serve with mango and rice.
