Strawberry avocado salmon poké

SALMON AVOCADO STRAWBERRY POKÉ

Portions : 4 - Preparation time : 15 minutes

Ingredients

  • 400 g (13 1/2 oz) salmon, cubed
  • 60 ml (4 tablespoons) sesame oil
  • 5 ml (1 tsp.) Sriracha hot sauce
  • 45 ml (3 tbsp.) homemade or store-bought mayonnaise
  • 60 ml (4 tbsp.) lemon juice
  • 30 ml (2 tbsp.) soy sauce
  • 60 ml (4 tbsp.) canola oil
  • 4 servings rice, cooked
  • 250 ml (1 cup) diced strawberries
  • 2 avocados, sliced
  • 125 ml (1/2 cup) radishes, sliced
  • 30 ml (2 tbsp.) sesame seeds
  • 125 ml (1/2 cup) coriander leaves
  • salt and freshly ground pepper to taste

Preparation

  1. In a bowl, combine salmon cubes, sesame oil, half the hot sauce and mayonnaise, salt and pepper. Check seasoning.
  2. In another bowl, mix lemon juice, soy sauce, canola oil and remaining hot sauce. Check seasoning.
  3. In each serving bowl, divide the rice, salmon cubes, strawberries, avocado slices, radishes, sesame seeds, prepared sauce and a few coriander leaves on top.
