Potatoes with decadent herbs

Ingredients

  • 4 potatoes, cut into 12 to 16 wedges
  • 60 ml (4 tablespoons) olive oil
  • 60 ml (4 tbsp.) unsalted butter
  • 3 garlic cloves, chopped
  • 1 pinch cayenne pepper
  • 15 ml (1 tbsp.) thyme, leaves removed
  • 5 ml (1 tsp.) rosemary, leaves removed
  • 60 ml (4 tbsp.) parsley leaves, chopped
  • Salt and pepper to taste

Preparation

  1. In a hot skillet, sear the potatoes in the oil for 2 minutes on each side.
  2. Lower the heat and add the butter, garlic, cayenne pepper, thyme and rosemary. Cook over low heat for 10 minutes, turning the slices from time to time.
  3. Sprinkle the top with parsley, salt and pepper.
