Ingredients
- 800 g of fresh pork belly
- 50 ml black mushroom soy sauce
- 30 ml of caster sugar
- 2 eggs
- Sesame seeds
- Fresh coriander
- 4 servings of cooked Thai rice
- Shallot pickles
Preparation
- Cut the pork belly into medium cubes. Brown them in a casserole dish with very hot oil.
- Add the black fungus soy sauce (very important, it doesn't taste the same as regular soy sauce) and the caster sugar. Cook for about 5 minutes.
- Reduce the heat, add water to cover, cover the casserole dish with its lid 3/4 full. Simmer for about 30 minutes.
- Hard-boil the eggs (9 minutes in boiling water). Peel and halve them. Add them to the meat.
- Sprinkle with sesame seeds and chopped coriander.
- Serve with Thai rice and shallot pickles.
