Caramel Pork

Porc au Caramel

Servings : for 4 people

Ingredients

  • 800 g of fresh pork belly
  • 50 ml black mushroom soy sauce
  • 30 ml of caster sugar
  • 2 eggs
  • Sesame seeds
  • Fresh coriander
  • 4 servings of cooked Thai rice
  • Shallot pickles

Preparation

  1. Cut the pork belly into medium cubes. Brown them in a casserole dish with very hot oil.
  2. Add the black fungus soy sauce (very important, it doesn't taste the same as regular soy sauce) and the caster sugar. Cook for about 5 minutes.
  3. Reduce the heat, add water to cover, cover the casserole dish with its lid 3/4 full. Simmer for about 30 minutes.
  4. Hard-boil the eggs (9 minutes in boiling water). Peel and halve them. Add them to the meat.
  5. Sprinkle with sesame seeds and chopped coriander.
  6. Serve with Thai rice and shallot pickles.
