Ingredients
1 Quebec pork tenderloin
125 ml (1/2 cup) flour
2 eggs, beaten
125 ml (1/2 cup) panko breadcrumbs
120 ml (8 tbsp) canola oil
1 onion, chopped
2 cloves garlic, chopped
60 ml (4 tbsp) honey
15 ml (1 tbsp) ginger, chopped
60 ml (4 tbsp) rice vinegar
15 ml (1 tbsp) Sambal Oelek
60 ml (4 tbsp) hoisin sauce
4 servings cooked Asian noodles
90 ml (6 tbsp) cilantro leaves, chopped
Salt and pepper to taste
Preparation
Cut the tenderloin into 1’’ slices
Organize 3 bowls, one containing the flour, the other the eggs beaten and a last one, the panko breadcrumbs.
Coat each slice of pork in the flour, then in the eggs and finally in the breadcrumbs.
In a hot pan, brown the pork slices in the oil. Remove and set aside.
In the same pan, brown the onion for 2 minutes.
Add the garlic, honey, ginger, rice vinegar, Sambal Oelek, hoisin sauce and cook for 2 to 3 minutes.
In each bowl, divide the noodles, the pork slices, cover everything with sauce, sprinkle with coriander.
