Pulled pork with beer and mustard

PULLED PORK WITH BEER AND MUSTARD

Portions : 4 - Preparation : 10 minutes - Cooking time : 40 minutes

Ingredients

  • 1 bottle Rickard's Red
  • 45 ml (3 tablespoons) hot mustard
  • 15 ml (1 tablespoon) honey
  • 600 g (20 ½ oz) Québec pork, pulled
  • 8 burger buns or brioche buns
  • 8 lettuce leaves
  • 8 slices strong Cheddar cheese
  • 120 ml (8 tbsp.) coleslaw
  • salt and pepper to taste

Preparation

  1. In a saucepan, reduce the beer over low heat for 30 minutes.
  2. Add the mustard and honey and simmer for a further 5 minutes.
  3. Add the pulled pork and allow to warm through.
  4. Open each loaf in half and top with a lettuce leaf and a slice of cheese. Top with the pulled pork, then the coleslaw.
