Unemployed barbecue pudding

Ingredients

Pastry

  • 250 ml (1 cup) sugar
  • 125 ml (1/2 cup) butter
  • 1 egg
  • 60 ml (4 tablespoons) old-fashioned 15% Lactantia cream
  • 250 ml (1 cup) flour
  • 1 pinch salt
  • 1 orange, zest
  • 15 ml (1 tbsp) baking powder
  • 15 ml (1 tbsp) natural vanilla essence

The coulis

  • 250 ml (1 cup) maple syrup
  • 250 ml (1 cup) old-fashioned 15% Lactantia cream
  • 15 ml (1 tablespoon) natural vanilla extract
  • 1 pinch salt

Preparation

  1. Preheat BBQ to 200°C (400°F), heat on one side only.
  2. In a bowl, whisk together sugar and butter.
  3. Add egg, old-fashioned cream and whisk for 1 minute.
  4. Stir in flour, salt, zest, baking powder and vanilla.
  5. For the coulis, combine the maple syrup, cream, vanilla extract and salt in a bowl.
  6. Pour the coulis into a cake tin or cast-iron pan.
  7. Then add the prepared batter.
  8. Place the cake tin on the barbecue grill, close the lid and cook for about 35 minutes, depending on the size of the pan.
