Cuban Chicken

Ingredients

  • 1 whole chicken, cut open
  • ½ bunch coriander, leaves removed, chopped
  • 4 garlic cloves, chopped
  • 30 ml (2 tbsp.) cumin, ground
  • 60 ml (4 tbsp.) sugar
  • 3 limes, zest removed
  • 3 lemons, zest removed
  • 125 ml (1/2 cup) lime juice
  • 125 ml (1/2 cup) orange juice
  • 90 mL (6 tbsp) olive oil
  • Salt and pepper to taste

Preparation

  1. In a sealable bag large enough to hold the chicken, add and mix the coriander, garlic, cumin, sugar, lime and lemon zests, lime and orange juices, olive oil, salt and pepper.
  2. Add and coat the chicken with the mixture and marinate for 24 hours.
  3. Preheat oven, rack in center, to 190°C (375°F).
  4. Place the chicken on a rack and bake for 1 hour. During cooking, brush the chicken regularly with the remaining marinade.
  5. Serve with roast potatoes.
