Ingredients
- 1 whole chicken, cut open
- ½ bunch coriander, leaves removed, chopped
- 4 garlic cloves, chopped
- 30 ml (2 tbsp.) cumin, ground
- 60 ml (4 tbsp.) sugar
- 3 limes, zest removed
- 3 lemons, zest removed
- 125 ml (1/2 cup) lime juice
- 125 ml (1/2 cup) orange juice
- 90 mL (6 tbsp) olive oil
- Salt and pepper to taste
Preparation
- In a sealable bag large enough to hold the chicken, add and mix the coriander, garlic, cumin, sugar, lime and lemon zests, lime and orange juices, olive oil, salt and pepper.
- Add and coat the chicken with the mixture and marinate for 24 hours.
- Preheat oven, rack in center, to 190°C (375°F).
- Place the chicken on a rack and bake for 1 hour. During cooking, brush the chicken regularly with the remaining marinade.
- Serve with roast potatoes.
