Honey-glazed chicken cordon bleu

HONEY-GLAZED CHICKEN CORDON BLEU

Portions : 4 - Preparation : 20 minutes - Cooking time : about 20 minutes

Ingredients

  • 4 chicken breasts, halved and flattened
  • 30 ml (2 tablespoons) Knorr concentrated chicken broth
  • 4 slices Mozzarella cheese
  • 4 slices ham
  • 30 ml (2 tbsp.) cooking oil
  • 60 ml (4 tbsp.) honey
  • 60 ml (4 tbsp) panko breadcrumbs
  • 125 ml (1/2 cup) white wine
  • 1 bay leaf
  • 30 ml (2 tbsp.) butter
  • Salt and pepper to taste

Toppings

  • Roasted broccoli
  • Sautéed potatoes

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. On a work surface, completely open each chicken breast, flatten, sprinkle with cheese, ham, salt and pepper, then roll up.
  3. In a hot frying pan, sear the prepared rolls in a little fat for 1 minute on each side.
  4. Mix honey and Knorr broth in a bowl.
  5. In the pan, brush the chicken rolls with the prepared mixture, sprinkle with the breadcrumbs, add the white wine, bay leaf and butter to the bottom of the pan and cook in the oven for 15 minutes.
  6. Serve chicken rolls with green vegetables and sautéed potatoes.
