Asian Chicken, Zucchini and Peanuts

Ingredients

  • 3 Quebec chicken breasts, cubed
  • 60 ml (4 tbsp) canola oil
  • 1 onion, thinly sliced
  • 2 zucchini, thickly sliced
  • 2 cloves garlic, minced
  • 60 ml (4 tbsp) soy sauce
  • 60 ml (4 tbsp) sesame oil
  • 5 ml (1 tsp) Sambal Oelek hot sauce
  • 250 ml (1 cup) crushed peanuts
  • 60 ml (4 tbsp) chopped coriander leaves

Preparation

  1. In a hot pan, brown the chicken cubes in a little canola oil. Then remove and set aside.
  2. In the same pan, brown the onion and zucchini.
  3. Add garlic, chicken, soy sauce, sesame oil, hot sauce and cook for 2 to 3 minutes more. Check the seasoning.
  4. Add crushed peanuts and coriander.
  5. Serve with white rice
