Creamy Chicken

Serves : 4

Preparation time: 15 minutes

Cooking time: 35 to 40 minutes

Ingredients

  • 1 chicken, cut into 4 pieces
  • 60 ml (4 tablespoons) flour
  • 60 ml (4 tbsp.) butter
  • 250 ml (1 cup) onion, chopped
  • 500 ml (2 cups) squash, cubed
  • 250 ml (1 cup) white wine
  • 2 garlic cloves, chopped
  • 15 ml (1 tbsp.) turmeric powder
  • 250 ml (1 cup) celery, sliced
  • 15 ml (1 tbsp.) thyme, leaves removed
  • 5 ml (1 tsp.) Sriracha hot sauce
  • 1 lemon, juice
  • 1l (4 cups) chicken broth
  • 4 portions cooked pasta
  • Salt and pepper to taste

Preparation

  1. Season chicken pieces with salt and pepper and coat with flour.
  2. In a hot casserole dish, sear chicken pieces in butter. Remove and set aside.
  3. In the same pan, sear the onion and squash.
  4. Return the chicken pieces to the pan and deglaze with white wine.
  5. Add the garlic, turmeric, celery, thyme, hot sauce, lemon and stock and cook, covered, over medium heat for 25 minutes. Check seasoning.
  6. Serve with pasta.
