Roast chicken with olives and honey

Poulet rôti aux olives et au miel

Ingredients

  • 60 ml (4 tablespoons) honey
  • 500 ml (2 cups) green olives, chopped
  • 4 garlic cloves, chopped
  • 4 sprigs thyme, leaves removed
  • 8 ml (1/2 tbsp.) paprika
  • 8 ml (1/2 tbsp.) cumin
  • 1 whole Québec chicken
  • 500 ml (2 cups) chicken broth
  • 4 portions fresh cooked pasta
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. In a bowl, combine honey, olives, garlic, thyme, paprika, cumin, salt and pepper.
  3. Coat the chicken with the mixture.
  4. Place the chicken in a roasting pan, add the broth and bake for 1 hour 30 minutes.
  5. Remove the chicken from the roasting tray and, over the heat, bring the cooking juices to the boil to reduce slightly. Check seasoning.
  6. Serve chicken with fresh pasta and cooking juices.
