Ingredients
- 60 ml (4 tablespoons) honey
- 500 ml (2 cups) green olives, chopped
- 4 garlic cloves, chopped
- 4 sprigs thyme, leaves removed
- 8 ml (1/2 tbsp.) paprika
- 8 ml (1/2 tbsp.) cumin
- 1 whole Québec chicken
- 500 ml (2 cups) chicken broth
- 4 portions fresh cooked pasta
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 190°C (375°F).
- In a bowl, combine honey, olives, garlic, thyme, paprika, cumin, salt and pepper.
- Coat the chicken with the mixture.
- Place the chicken in a roasting pan, add the broth and bake for 1 hour 30 minutes.
- Remove the chicken from the roasting tray and, over the heat, bring the cooking juices to the boil to reduce slightly. Check seasoning.
- Serve chicken with fresh pasta and cooking juices.
