All-in-one chicken

ALL-IN-ONE CHICKEN

Portions : 4 - Preparation : 15 minutes - Cooking time : 2 hours 45 minutes

Ingredients

  • 1 chicken, cut into 4 pieces
  • 6 slices bacon, chopped
  • 1 l (4 cups) root vegetables (carrot, turnip, parsnip, etc.)
  • 4 onions, cut into 4
  • 1 l (4 cups) baby potatoes
  • 4 garlic cloves
  • 500 ml (2 cups) chicken broth
  • 500 ml (2 cups) lager
  • 120 ml (8 tbsp.) maple syrup
  • 90 ml (6 tbsp) olive oil
  • 15 ml (1 tbsp) herbes de Provence blend
  • 45 ml (3 tbsp.) Cajun spice blend
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 180°C (350°F).
  2. Place chicken pieces, bacon, root vegetables, onions, potatoes, garlic, broth, beer and half the maple syrup in an ovenproof dish.
  3. Coat chicken pieces with olive oil, sprinkle with salt, pepper, herbes de Provence and Cajun spices, cover with aluminum foil and bake for 2 hours.
  4. Remove the foil, add the remaining maple syrup to the chicken pieces and bake, uncovered, for a further 30 to 45 minutes.
