ALL-IN-ONE CHICKEN

Ingredients
- 1 chicken, cut into 4 pieces
- 6 slices bacon, chopped
- 1 l (4 cups) root vegetables (carrot, turnip, parsnip, etc.)
- 4 onions, cut into 4
- 1 l (4 cups) baby potatoes
- 4 garlic cloves
- 500 ml (2 cups) chicken broth
- 500 ml (2 cups) lager
- 120 ml (8 tbsp.) maple syrup
- 90 ml (6 tbsp) olive oil
- 15 ml (1 tbsp) herbes de Provence blend
- 45 ml (3 tbsp.) Cajun spice blend
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 180°C (350°F).
- Place chicken pieces, bacon, root vegetables, onions, potatoes, garlic, broth, beer and half the maple syrup in an ovenproof dish.
- Coat chicken pieces with olive oil, sprinkle with salt, pepper, herbes de Provence and Cajun spices, cover with aluminum foil and bake for 2 hours.
- Remove the foil, add the remaining maple syrup to the chicken pieces and bake, uncovered, for a further 30 to 45 minutes.
