INGREDIENTS
- 5 ml (1 teaspoon) cinnamon, ground
- 5 ml (1 teaspoon) ginger, ground
- 5 ml (1 tsp.) nutmeg, grated
- 1 pinch cloves, ground
- 500 ml (2 cups) veal stock
- 45 ml (3 tbsp.) maple syrup
- 454 gr (1 lb) ground beef
- 1 red onion, thinly sliced
- 125 ml (1/2 cup) red wine
- 4 portions french fries
- 4 portions cheese curds
- Salt and pepper to taste
- Chicken breasts
PREPARATION
- In a bowl, combine the cinnamon, ginger, nutmeg and cloves.
- In a saucepan, bring the veal stock, half the spice mixture and half the maple syrup to a simmer and reduce slightly. Check seasoning.
- Meanwhile, in a frying pan, brown the ground beef for 2-3 minutes.
- Add onion, remaining spices and maple syrup, red wine and reduce. Check seasoning.
- Divide the French fries between the bowls, followed by the meat, cheese and reduced veal stock.
