Sweet potato and potato purée

SWEET POTATO AND POTATO PURÉE

Serves : 4

Preparation time: 15 minutes - Cooking time: 25 to 30 minutes

INGREDIENTS

  • 1 l (4 cups) sweet potatoes, cubed
  • 500 ml (2 cups) potatoes, cubed
  • 1 onion, thinly sliced
  • 10 ml (2 tsp.) herbes de Provence blend
  • 75 ml (5 tbsp.) olive oil
  • 45 ml (3 tbsp.) butter
  • 1 clove garlic, minced
  • salt and pepper to taste

METHOD

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a bowl, combine sweet potato and potato cubes, onion, herbes de Provence, olive oil and garlic.
  3. On a baking sheet lined with parchment paper or a silicone mat, spread the mixture and bake for 25 to 30 minutes.
  4. Using a hand blender, purée the cooked mixture.
  5. Stir in the butter. Check seasoning.
