SWEET POTATO AND POTATO PURÉE
Serves : 4
Preparation time: 15 minutes - Cooking time: 25 to 30 minutes
INGREDIENTS
- 1 l (4 cups) sweet potatoes, cubed
- 500 ml (2 cups) potatoes, cubed
- 1 onion, thinly sliced
- 10 ml (2 tsp.) herbes de Provence blend
- 75 ml (5 tbsp.) olive oil
- 45 ml (3 tbsp.) butter
- 1 clove garlic, minced
- salt and pepper to taste
METHOD
- Preheat oven, rack in center, to 200°C (400°F).
- In a bowl, combine sweet potato and potato cubes, onion, herbes de Provence, olive oil and garlic.
- On a baking sheet lined with parchment paper or a silicone mat, spread the mixture and bake for 25 to 30 minutes.
- Using a hand blender, purée the cooked mixture.
- Stir in the butter. Check seasoning.
