BBQ Quesadillas

BBQ QUESADILLAS

Ingredients

  • 15 ml (1 tablespoon) paprika
  • 15 ml (1 tablespoon) ground cumin
  • 15 ml (1 tbsp.) ground coriander
  • 2 garlic cloves, minced
  • 60 ml (4 tbsp) olive oil
  • 300 g (10 oz) protein of your choice (tofu, chicken, shrimp, beef)
  • 4 ears corn, already boiled
  • 1 red bell pepper, cut into 4 without seeds and white membranes
  • 1 red onion, sliced
  • 4 jalapenos, drained
  • 4 wheat tortillas
  • 60 ml (4 tbsp.) plain yogurt or sour cream
  • 500 ml (2 cups) grated cheese of your choice
  • 125 ml (1/2 cup) fresh coriander, chopped
  • Salt and pepper to taste

Preparation

  1. Preheat the BBQ to maximum.
  2. In a bowl, combine spices, garlic and 30 ml (2 tbsp.) olive oil. Add the chosen protein, season with salt and pepper and marinate for a few minutes.
  3. Brush corn on the cob with oil and grill for 4 minutes on each side. Allow to cool, then remove the kernels with a knife.
  4. Place the marinated protein on the BBQ grill and cook for a few minutes on each side, depending on the thickness of the pieces and the type of cooking desired.
  5. Place the peppers, onion rings and chillies on the grill and grill for 2 minutes on each side.
  6. Place the tortillas on the work surface, spread a spoonful of yogurt or sour cream on each one and top with the grilled peppers, onion, chillies and protein. Season, then sprinkle with grated cheese and chopped coriander.
  7. Fold the tortillas over and place on the BBQ grill for 2 minutes on each side.
  8. Enjoy while still hot.
