BBQ QUESADILLAS

Ingredients
- 15 ml (1 tablespoon) paprika
- 15 ml (1 tablespoon) ground cumin
- 15 ml (1 tbsp.) ground coriander
- 2 garlic cloves, minced
- 60 ml (4 tbsp) olive oil
- 300 g (10 oz) protein of your choice (tofu, chicken, shrimp, beef)
- 4 ears corn, already boiled
- 1 red bell pepper, cut into 4 without seeds and white membranes
- 1 red onion, sliced
- 4 jalapenos, drained
- 4 wheat tortillas
- 60 ml (4 tbsp.) plain yogurt or sour cream
- 500 ml (2 cups) grated cheese of your choice
- 125 ml (1/2 cup) fresh coriander, chopped
- Salt and pepper to taste
Preparation
- Preheat the BBQ to maximum.
- In a bowl, combine spices, garlic and 30 ml (2 tbsp.) olive oil. Add the chosen protein, season with salt and pepper and marinate for a few minutes.
- Brush corn on the cob with oil and grill for 4 minutes on each side. Allow to cool, then remove the kernels with a knife.
- Place the marinated protein on the BBQ grill and cook for a few minutes on each side, depending on the thickness of the pieces and the type of cooking desired.
- Place the peppers, onion rings and chillies on the grill and grill for 2 minutes on each side.
- Place the tortillas on the work surface, spread a spoonful of yogurt or sour cream on each one and top with the grilled peppers, onion, chillies and protein. Season, then sprinkle with grated cheese and chopped coriander.
- Fold the tortillas over and place on the BBQ grill for 2 minutes on each side.
- Enjoy while still hot.
