Egg quesadillas

EGG QUESADILLAS

Portions : 4 - Preparation time : 10 minutes - Cooking time : 25 to 30 minutes

Ingredients

  • 1 onion, thinly sliced
  • 1 red bell pepper, julienned
  • 30 ml (2 tablespoons) butter
  • 30 ml (2 tablespoons) honey
  • 5 eggs
  • 30 ml (2 tbsp.) Tex-Mex spice blend
  • 125 ml (1/2 cup) milk
  • 250 ml (1 cup) cheese, grated (mozzarella or cheddar)
  • 4 8" tortillas
  • Salt and pepper to taste

Preparation

  1. In a hot skillet, sauté the onion and bell pepper in a little butter over high heat for 5 minutes.
  2. Add honey, salt and pepper and stir. Set aside.
  3. In a bowl, whisk together eggs, spices and milk.
  4. In a hot frying pan, over medium heat, in a little butter, add the beaten eggs and cook, stirring, for 3 to 4 minutes. Remove and set aside.
  5. In the same hot pan, place a tortilla, spread half the cooked eggs, half the onion and bell pepper mixture and half the grated cheese.
  6. Place another tortilla on top and cook over medium heat for 4 minutes.
  7. Then turn over and cook for a further 4 minutes.
  8. Repeat for the remaining 2 tortillas.
  9. Serve with a little hot sauce and a green salad.
