EGG QUESADILLAS
Portions : 4 - Preparation time : 10 minutes - Cooking time : 25 to 30 minutes
Ingredients
- 1 onion, thinly sliced
- 1 red bell pepper, julienned
- 30 ml (2 tablespoons) butter
- 30 ml (2 tablespoons) honey
- 5 eggs
- 30 ml (2 tbsp.) Tex-Mex spice blend
- 125 ml (1/2 cup) milk
- 250 ml (1 cup) cheese, grated (mozzarella or cheddar)
- 4 8" tortillas
- Salt and pepper to taste
Preparation
- In a hot skillet, sauté the onion and bell pepper in a little butter over high heat for 5 minutes.
- Add honey, salt and pepper and stir. Set aside.
- In a bowl, whisk together eggs, spices and milk.
- In a hot frying pan, over medium heat, in a little butter, add the beaten eggs and cook, stirring, for 3 to 4 minutes. Remove and set aside.
- In the same hot pan, place a tortilla, spread half the cooked eggs, half the onion and bell pepper mixture and half the grated cheese.
- Place another tortilla on top and cook over medium heat for 4 minutes.
- Then turn over and cook for a further 4 minutes.
- Repeat for the remaining 2 tortillas.
- Serve with a little hot sauce and a green salad.
