Maple bacon and cheese quiche

Cooking time : 35 minutes

Ingredients

  • 2 eggs
  • 125 ml (1/2 cup) milk
  • 90 ml (6 tablespoons) mozzarella, grated
  • 125 ml (½ cup) sharp cheddar, cubed
  • 125 ml (½ cup) feta cheese, cubed
  • 1 savoury pie crust (shortcrust pastry)
  • 8 slices bacon
  • 75 ml (5 tbsp.) maple syrup
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. Whisk eggs and milk in a bowl.
  3. Add mozzarella, cheddar, feta, salt and pepper.
  4. Line a tart tin with the shortcrust pastry. Pour the prepared mixture into the tin and bake for 20 minutes.
  5. Arrange the bacon slices on top of the quiche. Brush the bacon with maple syrup and bake for a further 10 minutes.
  6. Turn the oven to broil and leave the quiche in the oven for a few more minutes, until it is nicely colored.
