Monkfish stew niçoise style

MONKFISH STEW NIÇOISE STYLE

Portions : 4 - Preparation : 5 minutes - Cooking time : 80 minutes

Ingredients

  • 500 ml (2 cups) tomato coulis
  • 500 ml (2 cups) vegetable broth
  • 2 garlic cloves, chopped
  • 1 onion, chopped
  • 2 pinches herbes de Provence
  • 125 ml (1/2 cup) dry white wine
  • 1 pinch cayenne pepper
  • 800 g (27 oz) monkfish, paved
  • 750 ml (3 cups) green beans, cut into chunks
  • 60 ml (4 tablespoons) basil leaves, chopped
  • Salt and pepper to taste

Preparation

  1. In a slow cooker, add tomato coulis, broth, garlic, onion, herbes de Provence, white wine, cayenne pepper, salt and pepper. Place the monkfish steaks in the stock and cook on a very low heat for 1 hour.
  2. Add the beans and basil and cook for a further 20 minutes over medium heat. Check seasoning.
  3. Serve with rice or another cereal of your choice.
