MONKFISH STEW NIÇOISE STYLE
Portions : 4 - Preparation : 5 minutes - Cooking time : 80 minutes
Ingredients
- 500 ml (2 cups) tomato coulis
- 500 ml (2 cups) vegetable broth
- 2 garlic cloves, chopped
- 1 onion, chopped
- 2 pinches herbes de Provence
- 125 ml (1/2 cup) dry white wine
- 1 pinch cayenne pepper
- 800 g (27 oz) monkfish, paved
- 750 ml (3 cups) green beans, cut into chunks
- 60 ml (4 tablespoons) basil leaves, chopped
- Salt and pepper to taste
Preparation
- In a slow cooker, add tomato coulis, broth, garlic, onion, herbes de Provence, white wine, cayenne pepper, salt and pepper. Place the monkfish steaks in the stock and cook on a very low heat for 1 hour.
- Add the beans and basil and cook for a further 20 minutes over medium heat. Check seasoning.
- Serve with rice or another cereal of your choice.
