Ingredients
- 8 Québec chicken drumsticks
- 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 1 onion, thinly sliced
- 250 ml (1 cup) white wine
- 3 garlic cloves, minced
- 1 l (4 cups) homemade tomato sauce
- 250 ml (1 cup) chicken broth
- 250 ml (1 cup) whole or sliced green olives
- 2 yellow peppers, julienned
- 5 ml (1 tsp.) herbes de Provence blend
- 5 ml (1 tsp.) paprika
- 15 ml (1 tbsp.) honey
- Salt and pepper to taste
Preparation
- In a casserole dish, brown the chicken drumsticks in Mycryo butter or the fat of your choice, until browned.
- Add the onion and cook for 2 minutes. Season lightly with salt and pepper.
- Add the white wine to deglaze, then add all the garlic, tomato sauce, stock, olives, peppers, herbes de Provence, paprika and honey.
- Cover and cook over low heat for 2 hours.
