Provençal chicken drumstick stew

Ingredients

  • 8 Québec chicken drumsticks
  • 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 1 onion, thinly sliced
  • 250 ml (1 cup) white wine
  • 3 garlic cloves, minced
  • 1 l (4 cups) homemade tomato sauce
  • 250 ml (1 cup) chicken broth
  • 250 ml (1 cup) whole or sliced green olives
  • 2 yellow peppers, julienned
  • 5 ml (1 tsp.) herbes de Provence blend
  • 5 ml (1 tsp.) paprika
  • 15 ml (1 tbsp.) honey
  • Salt and pepper to taste

Preparation

  1. In a casserole dish, brown the chicken drumsticks in Mycryo butter or the fat of your choice, until browned.
  2. Add the onion and cook for 2 minutes. Season lightly with salt and pepper.
  3. Add the white wine to deglaze, then add all the garlic, tomato sauce, stock, olives, peppers, herbes de Provence, paprika and honey.
  4. Cover and cook over low heat for 2 hours.
