Ingredients
6 mild or spicy Italian sausages
60 ml (4 tbsp) olive oil
1 onion, chopped
500 ml (2 cups) cooked chickpeas, drained
2 cloves garlic, chopped
4 tomatoes, diced
1.5 l (6 cups) spinach leaves
15 ml (1 tbsp) mixed herbs of Provence
2 bay leaves
750 ml (3 cups) chicken broth
2 red peppers, julienned
125 ml (1/2 cup) parmesan, grated
4 servings cooked rice
Salt and pepper to taste
Preparation
In a saucepan, brown the sausage slices in the olive oil for 2 to 3 minutes.
Add the onion and continue cooking for 3 minutes.
Add the chickpeas, garlic, tomatoes, spinach leaves, herbes de Provence, bay leaf, stock and simmer for 30 minutes.
Add the peppers and cook for another 5 minutes. Check the seasoning.
Serve with rice and top with parmesan.
