Ingredients
- 300 g (10 oz) fresh salmon, cube-shaped
- 30 ml (2 tablespoons) olive oil
- 125 ml (½ cup) white wine
- 1 clove garlic, minced
- 75 ml (1/3 cup) butter, at room temperature
- 125 ml (1/2 cup) Activia plain yogurt
- 1 lemon, zest
- 90 ml (6 tbsp) chives, snipped
- 90 ml (6 tbsp) dill, chopped
- 2 pinches cayenne pepper
- 15 ml (1 tbsp) maple syrup
- Qs country-style bread croutons
- Salt and pepper to taste
Preparation
- In a hot skillet, sear the salmon in olive oil for 2 minutes on each side.
- Add white wine to deglaze.
- Add the garlic, reduce the heat and continue cooking for 5 minutes, or until the fish is completely cooked and the liquid has evaporated.
- Allow salmon to cool.
- In a bowl, gently mash the salmon with a fork.
- Add the butter and mix until smooth.
- Add yogurt, lemon zest, chives, dill, chili pepper, maple syrup, salt and pepper. Check seasoning.
- Pour into a serving bowl and refrigerate for 2 hours before serving.
- Serve with country-style bread croutons.
