Fried rice with melted beef

FRIED RICE WITH MELTED BEEF

Portions : 4 - Preparation : 15 minutes - Cooking time : 6 to 8 minutes

Ingredients

  • 500 g (17 oz) beef, rendered
  • 60 ml (4 tablespoons) canola oil
  • 1 onion, thinly sliced
  • 2 eggs, beaten with a fork
  • 2 garlic cloves, minced
  • 500ml (2 cups) green peas, blanched
  • 250ml (1 cup) carrots, brunoise
  • 60ml (4 tablespoons) soy sauce
  • 90ml (6 tablespoons) sesame oil
  • 5ml (1 teaspoon) Sambal Oelek
  • 125 ml (½ cup) peanuts, crushed
  • 30 ml (2 tbsp.) hoisin sauce
  • 1 lime, juice removed
  • 4 portions rice, cooked
  • 125 ml (½ cup) fresh coriander leaves, chopped

Preparation

  1. In a hot frying pan or wok, brown the thinly sliced beef in the hot oil.
  2. Add the onion and sauté for a further 2 minutes.
  3. Add the beaten eggs and cook quickly.
  4. Add the garlic, peas, carrots, soy sauce, sesame oil, Sambal Oelek, peanuts, hoisin sauce, lime juice and rice and sauté together. Check the seasoning.
  5. Just before serving, add the coriander.
