FRIED RICE WITH MELTED BEEF
Portions : 4 - Preparation : 15 minutes - Cooking time : 6 to 8 minutes
Ingredients
- 500 g (17 oz) beef, rendered
- 60 ml (4 tablespoons) canola oil
- 1 onion, thinly sliced
- 2 eggs, beaten with a fork
- 2 garlic cloves, minced
- 500ml (2 cups) green peas, blanched
- 250ml (1 cup) carrots, brunoise
- 60ml (4 tablespoons) soy sauce
- 90ml (6 tablespoons) sesame oil
- 5ml (1 teaspoon) Sambal Oelek
- 125 ml (½ cup) peanuts, crushed
- 30 ml (2 tbsp.) hoisin sauce
- 1 lime, juice removed
- 4 portions rice, cooked
- 125 ml (½ cup) fresh coriander leaves, chopped
Preparation
- In a hot frying pan or wok, brown the thinly sliced beef in the hot oil.
- Add the onion and sauté for a further 2 minutes.
- Add the beaten eggs and cook quickly.
- Add the garlic, peas, carrots, soy sauce, sesame oil, Sambal Oelek, peanuts, hoisin sauce, lime juice and rice and sauté together. Check the seasoning.
- Just before serving, add the coriander.
