Chicken Fried Rice

Riz frit au poulet

Ingredients

  • 2 chicken breasts, small cubes
  • 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 1 onion, chopped
  • 15 ml (1 tbsp.) ginger, chopped
  • 250 ml (1 cup) carrot, cubed
  • 2 garlic cloves, chopped
  • 500 ml (2 cups) snow peas
  • 250 ml (1 cup) edamame beans
  • 30 ml (2 tbsp.) soy sauce
  • 5 ml (1 tsp.) Sambal Oelek hot sauce
  • 30 ml (2 tbsp.) Hoisin sauce
  • 750 ml (3 cups) chicken broth
  • 60 ml (4 tbsp.) sesame oil
  • 190 ml (¾ cup) basmati rice
  • Salt and pepper to taste

Preparation

  1. In a skillet, brown chicken cubes coated with Mycryo butter or in the fat of your choice, until browned.
  2. Add onion, ginger and carrot cubes and sauté for 2 minutes.
  3. Add garlic, snow peas, beans, soy sauce, hot sauce, Hoisin sauce, stock, sesame oil, rice, cover and simmer for 15 minutes. Check seasoning.
  4. Remove the lid and sauté the mixture over high heat.
