Stir-fried rice with duck and eggs

Serves : 4

Preparation time: 10 minutes

Cooking time : 6 to 8 minutes

Ingredients

  • 1 duck breast, thinly sliced
  • 60 ml (4 tablespoons) canola oil
  • 30 ml (2 tbsp.) Hoisin sauce
  • 60 ml (4 tbsp.) soy sauce
  • 2 garlic cloves, minced
  • 15 ml (1 tbsp.) fresh ginger, chopped
  • 5 ml (1 tsp.) hot sauce
  • 4 kidney beans, cut into chunks
  • 2 shallots, minced
  • 4 eggs
  • 4 portions rice, cooked
  • 4 green onions, sliced
  • 60 ml (4 tbsp.) sesame oil
  • 30 ml (2 tbsp.) sesame seeds

Preparation

  1. In a hot skillet or wok, sear duck slices in a little canola oil over high heat.
  2. Add the Hoisin sauce, soy sauce, garlic, ginger, hot sauce, kidney beans and shallots and sauté for 2 minutes. Remove and set aside.
  3. In the same pan, add a little oil, break the eggs directly into the pan and cook them quickly, stirring all the time.
  4. Add the cooked rice and sauté.
  5. Add the prepared meat, green onion, sesame oil and sesame seeds.
