Ingredients

  • 1 Québec beef tenderloin roast
  • 250 ml (1 cup) bière rousse
  • 90 ml (6 tablespoons) balsamic vinegar
  • 2 garlic cloves, chopped
  • 2 sprigs thyme, leaves removed
  • 1 bouillon cube
  • salt and freshly ground pepper to taste

Stewed onions

  • 4 onions, chopped
  • 1 russet beer
  • 30 ml (2 tbsp.) brown sugar
  • 2 garlic cloves
  • 60 ml (4 tbsp.) balsamic vinegar
  • Salt and freshly ground pepper to taste

Preparation

  1. Preheat the BBQ to maximum
  2. In a tall container, using a hand blender, blend oil, vinegar, garlic, thyme, salt and pepper.
  3. Using a kitchen syringe, collect the sauce and inject the beef tenderloin all over.
  4. Rub the meat with the stock cube.
  5. Turn off the heat, place the meat on one side of the BBQ and on the grill on that same side. Close the lid and cook for 20 to 25 minutes, depending on desired doneness. Your thermometer should read 50°C (122°F).
  6. Remove from the BBQ. Wrap the meat in aluminum foil and let stand for 10 minutes.
  7. Then, on the lit side of the BBQ grill, continue cooking to brown the roast before serving.
  8. Meanwhile, in a saucepan over medium heat, cook the onions, beer, brown sugar, garlic, vinegar, salt and pepper for 20 to 30 minutes. Check seasoning.
