ROAST PORK WITH APPLES AND CHESTNUTS
Portions : 4 - Preparation time : 15 minutes - Cooking time : 50 minutes
Ingredients
- 1 Québec pork loin roast
- 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 2 onions, chopped
- 500 ml (2 cups) chestnuts, frozen
- 2 garlic cloves, chopped
- 500 ml (2 cups) chicken broth
- 250 ml (1 cup) apple juice
- 2 green apples, large cubes
- 125 ml (½ cup) cream
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- In a hot skillet, sear the pork roast coated with Mycryo butter or in the cors gras of your choice, 2 minutes on each side. Season with salt and pepper, remove from pan and set aside.
- In the same hot pan, brown the onions and chestnuts.
- Place the onions, chestnuts, garlic, stock, apple juice and apples in a roasting pan, place the roast on top and cook in the oven for 45 minutes, or until the meat is cooked and tender.
- If necessary, reduce the cooking juices and add the cream. Check seasoning.
- On the work surface, slice the roast and top with the apple and chestnut sauce.
