Christmas lemon and spice shortbread

Ingredients

  • 3 eggs, yolks
  • 100 gr (3 1/2 oz) sugar
  • 125 gr (4 1/2 oz) soft butter
  • 250 gr (9 oz) flour
  • 1 lemon, zest
  • 5 ml (1 teaspoon) baking powder
  • 3 ml (1/2 tsp.) cinnamon, powdered
  • 3 ml (1/2 tsp.) ginger, powdered
  • 1 pinch cloves, powdered
  • 1 pinch salt

Preparation

  1. In a bowl, using a hand mixer, beat the egg yolks, then add the sugar and continue beating until light and fluffy.
  2. In a separate bowl, mix flour, lemon zest, baking powder, cinnamon, ginger, pinches of clove and salt.
  3. Stir in the butter until you obtain a sandy dough.
  4. Add the egg and sugar mixture and work into a smooth ball.
  5. Wrap the dough ball in cling film and set aside in the fridge for 1 hour.
  6. Using a rolling pin, roll out the dough on the work surface to a thickness of ¼ ''.
  7. Using a cookie cutter or knife, cut out cookies.
  8. On an ovenproof tray lined with parchment paper or a silicone mat, arrange the dough pieces and set aside in the fridge, again for 30 minutes.
  9. Preheat oven, rack in center, to 180°C (350°F).
  10. Bake for 12 minutes.
