Ingredients
- 3 eggs, yolks
- 100 gr (3 1/2 oz) sugar
- 125 gr (4 1/2 oz) soft butter
- 250 gr (9 oz) flour
- 1 lemon, zest
- 5 ml (1 teaspoon) baking powder
- 3 ml (1/2 tsp.) cinnamon, powdered
- 3 ml (1/2 tsp.) ginger, powdered
- 1 pinch cloves, powdered
- 1 pinch salt
Preparation
- In a bowl, using a hand mixer, beat the egg yolks, then add the sugar and continue beating until light and fluffy.
- In a separate bowl, mix flour, lemon zest, baking powder, cinnamon, ginger, pinches of clove and salt.
- Stir in the butter until you obtain a sandy dough.
- Add the egg and sugar mixture and work into a smooth ball.
- Wrap the dough ball in cling film and set aside in the fridge for 1 hour.
- Using a rolling pin, roll out the dough on the work surface to a thickness of ¼ ''.
- Using a cookie cutter or knife, cut out cookies.
- On an ovenproof tray lined with parchment paper or a silicone mat, arrange the dough pieces and set aside in the fridge, again for 30 minutes.
- Preheat oven, rack in center, to 180°C (350°F).
- Bake for 12 minutes.
