Avocado, mango and grilled shrimp salad

AVOCADO, MANGO AND GRILLED SHRIMP SALAD

Portions : 4 - Preparation : 15 minutes - Cooking time : 2 minutes

Ingredients

  • 30 ml (2 tablespoons) honey
  • 1 pinch cayenne pepper
  • 1 clove garlic, minced
  • 30 ml (2 tablespoons) canola oil
  • 45 ml (3 tbsp.) sesame oil
  • 15 ml (1 tbsp.) soy sauce
  • 1 lime, juice
  • 1 lemon, juice
  • 12 shrimp 31/40, raw and peeled
  • 2 mangoes, cubed
  • 2 avocados, cubed
  • 1 red bell pepper, in strips
  • ¼ bunch fresh cilantro, leaves removed, chopped
  • 45 ml (3 tbsp.) sesame seeds
  • salt and freshly ground pepper to taste

Preparation

  1. In a bowl, combine honey, cayenne pepper, garlic, canola oil, sesame oil, soy sauce, lime and lemon juice.
  2. Reserve half the sauce in another bowl.
  3. In one of the bowls, add and coat the shrimp.
  4. In a hot pan, or on a BBQ, grill shrimp for 1 minute on each side. Check seasoning.
  5. In the other bowl, add and toss mangoes, avocados, red bell pepper, coriander and sesame seeds. Check seasoning.
  6. Divide the salad between the plates and arrange 3 grilled shrimps on top.
