AVOCADO, MANGO AND GRILLED SHRIMP SALAD
Portions : 4 - Preparation : 15 minutes - Cooking time : 2 minutes
Ingredients
- 30 ml (2 tablespoons) honey
- 1 pinch cayenne pepper
- 1 clove garlic, minced
- 30 ml (2 tablespoons) canola oil
- 45 ml (3 tbsp.) sesame oil
- 15 ml (1 tbsp.) soy sauce
- 1 lime, juice
- 1 lemon, juice
- 12 shrimp 31/40, raw and peeled
- 2 mangoes, cubed
- 2 avocados, cubed
- 1 red bell pepper, in strips
- ¼ bunch fresh cilantro, leaves removed, chopped
- 45 ml (3 tbsp.) sesame seeds
- salt and freshly ground pepper to taste
Preparation
- In a bowl, combine honey, cayenne pepper, garlic, canola oil, sesame oil, soy sauce, lime and lemon juice.
- Reserve half the sauce in another bowl.
- In one of the bowls, add and coat the shrimp.
- In a hot pan, or on a BBQ, grill shrimp for 1 minute on each side. Check seasoning.
- In the other bowl, add and toss mangoes, avocados, red bell pepper, coriander and sesame seeds. Check seasoning.
- Divide the salad between the plates and arrange 3 grilled shrimps on top.
