Broccoli, pumpkin seed and cranberry salad

BROCCOLI, PUMPKIN SEED AND CRANBERRY SALAD

Ingredients

  • 45 ml (3 tablespoons) mayonnaise
  • 30 ml (2 tablespoons) olive oil
  • 1 lemon, juice
  • 15 ml (1 tbsp.) Sambal Oelek or other hot sauce
  • 1 broccoli, cut into small pieces
  • 125 ml (1/2 cup) dried cranberries
  • 1 Granny Smith apple, julienned
  • ¼ bunch parsley, leaves removed, chopped
  • 4 radishes, thinly sliced
  • 125 ml (1/2 cup) pumpkin seeds, roasted
  • salt and freshly ground pepper to taste

Preparation

  1. In a bowl, combine mayonnaise, olive oil, lemon juice and hot sauce.
  2. Add broccoli, cranberries, apple, parsley, salt and pepper. Check seasoning.
  3. Garnish each salad plate with radish slices and pumpkin seeds.
