BROCCOLI, PUMPKIN SEED AND CRANBERRY SALAD

Ingredients
- 45 ml (3 tablespoons) mayonnaise
- 30 ml (2 tablespoons) olive oil
- 1 lemon, juice
- 15 ml (1 tbsp.) Sambal Oelek or other hot sauce
- 1 broccoli, cut into small pieces
- 125 ml (1/2 cup) dried cranberries
- 1 Granny Smith apple, julienned
- ¼ bunch parsley, leaves removed, chopped
- 4 radishes, thinly sliced
- 125 ml (1/2 cup) pumpkin seeds, roasted
- salt and freshly ground pepper to taste
Preparation
- In a bowl, combine mayonnaise, olive oil, lemon juice and hot sauce.
- Add broccoli, cranberries, apple, parsley, salt and pepper. Check seasoning.
- Garnish each salad plate with radish slices and pumpkin seeds.
