Authentic Pumpkin and Cheese Salad

Ingredients

  • 1 small pumpkin, 1 kg to 1.5 kg, skin and seeds removed, quartered
  • 120 ml (8 tbsp) olive oil
  • 2 sprigs thyme, leaves removed
  • 2 cloves garlic, minced
  • 250 ml (1 cup) L’Authentique cheese
  • 60 ml (4 tbsp) chives, chopped
  • 60 ml (4 tbsp) white balsamic vinegar
  • 125 ml (½ cup) walnuts

Preparation

  1. Preheat the oven, rack in the middle, to 200 °C (400 °F).
  2. In a bowl, coat the pumpkin slices with olive oil, thyme, salt and pepper.
  3. On a baking sheet covered with a silicone mat, arrange the pumpkin slices and bake for 30 minutes. Let cool.
  4. In a bowl, mix the garlic, olive oil, chives, balsamic vinegar, salt and pepper. Check the seasoning.
  5. In each plate, distribute the pumpkin slices, cheese, nuts and add a little vinaigrette.
