Ingredients
- 1 small pumpkin, 1 kg to 1.5 kg, skin and seeds removed, quartered
- 120 ml (8 tbsp) olive oil
- 2 sprigs thyme, leaves removed
- 2 cloves garlic, minced
- 250 ml (1 cup) L’Authentique cheese
- 60 ml (4 tbsp) chives, chopped
- 60 ml (4 tbsp) white balsamic vinegar
- 125 ml (½ cup) walnuts
Preparation
- Preheat the oven, rack in the middle, to 200 °C (400 °F).
- In a bowl, coat the pumpkin slices with olive oil, thyme, salt and pepper.
- On a baking sheet covered with a silicone mat, arrange the pumpkin slices and bake for 30 minutes. Let cool.
- In a bowl, mix the garlic, olive oil, chives, balsamic vinegar, salt and pepper. Check the seasoning.
- In each plate, distribute the pumpkin slices, cheese, nuts and add a little vinaigrette.
