STRAWBERRY AND TOMATO SALAD WITH BURRATA

Ingredients
- 4 multicolored heirloom tomatoes, cut into chunks
- 1 punnet Quebec strawberries, rinsed, hulled and quartered
- 1 clove garlic, puréed
- 125 ml (1/2 cup) arugula
- 60 ml (4 tablespoons) olive oil
- 60 ml (4 tablespoons) balsamic vinegar
- 4 burrata cheese
- 60 ml (4 tablespoons) pecans
- 8 bread croutons
- 12 basil leaves
- Qs fleur de sel
- Salt and pepper to taste
Preparation
- In a bowl, combine tomatoes, strawberries, garlic, arugula, olive oil, balsamic vinegar, salt and pepper. Check seasoning.
- On each plate, divide the prepared salad, place a burrata on top, scatter the pecans, croutons and basil leaves. Sprinkle a little fleur de sel and freshly ground pepper over the top.
